While tent camping and cooking on a one-burner stove, I keep thing simple. Today is a classic: cereal and almond milk for breakfast and peanut butter on whole wheat bread for lunch. Later it will be my camping dinner classic: baby red potatoes boiled with diced celery then mixed with chopped walnuts and blue cheese or just the potatoes and a grilled cheese sandwich. Once, on a bitterly cold day, I bought a can of chunky soup and it was divine. Each day, I also eat a banana, a few mango slices, and a small container of applesauce or Mandarin oranges. Simply my favorite days in terms of food prep.
As I mentioned, I eat breakfast out ever other day, a habit I will try to keep as I move along. Some days I go “deli”. I browse the deli section at the local store (a Safeway now) and find things like smoked pork, coleslaw, and potato salad. Other good finds: sushi, Mediterranean salad, roasted potatoes, quinoa salad, and broccoli salad. Recently I tried a dried tomato/pasta salad which was bland. Hummus is often right next to the deli so I pick that up sometimes and eat it with celery. If I think of it I buy a small pack of chocolate pudding cups, too. Every few weeks I buy some sliced turkey and cheese then wrap them around a pickle spear for a wrapless wrap. These are the best foods for travel days – just pull over somewhere nice for a picnic. Tango gets his regular food and then I toss a few nibbles of my food over to him because I cannot resist his pleading eyes.
Some days I want a sweet treat so I get a container of Halo Top ice-cream. When I do cook something more extensive (while sipping a glass of wine), it is usually because I have scored a rotisserie chicken and need to use it up. Then I will make:
- Rotisserie chicken and sauteed vegetables
- Homemade chicken stew with dumplings
- Chicken and pasta with cherry tomatoes and zucchini
I need more spinach and other veggies, which I will work on. I am also looking forward to lots of fresh fish while in Alaska!
Just a few ideas if you like to camp and/or car travel. I will add more if I get inspired.
You sound dangerously close to becoming a vegetarian! It’s easier, and food is less likely to go bad. Yes, you should be including more vegetables.
I don’t enjoy much meat. Mango with dinner tonight!
