Unlike last summer when I was tent camping in Alaska, I have a kitchen, everything I need for easy living on the road (stove, oven, refrigerator, freezer, double sink). Sometimes access to fresh foods is a problem, especially if I stay for a week or more in a remote area. Also, I don’t want to waste a lot of propane cooking things like grains. So, if I am not vigilant, I don’t eat as well on the road.
I was happy to find some new things this winter that make on-the-road cooking faster, easier, and healthier. My favorite so far is Boil-In-Bag Quinoa. It is just like the rice and cooks in about 10 minutes. What a boost for my preference to eat whole grains and plant protein. Here is the recipe for a new staple dish. The ingredients are basically quinoa, boiled potatoes, a small amount of cheese for flavor, and an array of veggies, which you can adapt to your preference. I use fresh when I have them but frozen works well, too. You can also add protein sources, like tofu or meats; however, quinoa has a robust amount as well.
Camping Quinoa
1 boil in bag Quinoa
2 medium red potatoes
Assortment of vegetables: kale or spinach, zuchinni, mushrooms, green onions, etc
Olive oil
½ cup Feta or Grated parmesan cheese
- Boil the quinoa according to package directions
- Cut the potatoes into small chunks and boil for about 10 mins. Since the potatoes and quinoa take the same amount of time, you can boil both in the same pot!
- Sautee vegetables and cooked potatoes in olive oil
- Mix everything together and stir in cheese
Thats it! This is super easy. It will feed two people as a main dish or makes several meals for a single person like me!
